Amaranth is an herb related to pigweed (and also known as Cockscomb) and is rich in proteins, minerals and vitamins A, B, C, B1, B2 and B3, as well as folic acid, niacin, calcium and iron.

Leaves and seeds of amaranth are edible.

Amaranth seeds formed the base of a dough called tzoalli that was used by the Mexica (Aztecs) to make figures used as part of religious rituals. The Spaniards characterized these rituals as blasphemous, and repressed the making of the figures and the cultivation of amaranth.
